Description & Properties

The AgraQuant® Gluten G12® is a sandwich enzyme-linked immunosorbent assay (ELISA) designed for the quantitative analysis of gluten in a variety of foods. Samples can vary from raw to processed foods, from environmental swabs to rinse water. The G12® antibody targets a 33-mer peptide which is resistant to enzymatic digestion and heat denatiuration, and is the fragment of the gliadin protein to which celiac disease sufferers react, making it a reliable analytical marker. This product is intended for laboratory use.
